Meals Using Deals: Italian Pasta Salad (Kroger/Smiths) + FREE Cookbook!

One of My Faves – Italian Pasta Salad!

Cold pasta salads are one of my favorite things to eat, as well as one of my favorite meals to prepare. If I let myself, I could pound down a giant bowl of this tasty salad in no time – of course, my hips and thighs would be screaming in protest, so I try to keep my servings at an acceptable level. Anyway, it’s easy and with only a few ingredients that you probably have in your ‘fridge, you can whip one up in no time. This week, Kroger’s has the Kroger salad dressings on sale for only $1.25, so if you don’t feel like making an Italian Pasta Salad, you can enjoy this salad by using a ranch or any flavor of dressing! This salad goes a long way, and it tastes better on the second day.

Ingredients:
Rotini pasta4 or 5 fresh,
button mushroom,
slicedCheddar cheese, cut into about ½ inch cubes
¼ C. fresh green onions (scallions), tops only, sliced on the bias
Kroger’s Italian Salad Dressing

Directions:
Cook pasta according to package directions, drain and rinse in cold water to stop cooking.Add mushrooms, cheddar cheese and green onions. Toss gently. Add enough Italian dressing sothat the pasta is well coated. Cover and refrigerate for several hours. The pasta will soak up the dressing quite a bit – so, if after the down time in the refrigerator, you need to add a little more Italian dressing, go right ahead. If you prefer to use a penne or a pasta other than rotini, that’s okay, too. Just make sure that when you’re cooking the pasta, you don’t overdo it – it should be ‘al dente,’ which means it should have a slight firmness to the pastawithout tasting starchy or floury.

When I cook, I try to prepare meals that can do double duty – this salad will serve as an entire meal or a side for lunch or dinner. (I feel compelled to confess that I’ve eaten this for breakfast, too – maybe it’s the ‘pizza for breakfast’ kind of thing!) The ingredients are what my family likes – the great thing about this recipe is that you can add just about any fresh veggie and it will be great!

Blueberry Madness!

When I was growing up in Montana, we lived ‘out in the sticks’ and Mom grew most of our fresh fruit, including strawberries, red and black raspberries – and, huckleberries! She’d make muffins and the best flapjacks that were loaded with these fabulous gems, and I’m pretty sure she got tired of our asking for pancakes with homemade huckleberry syrup every Saturday morning. But, alas – when we moved, we no longer had our own fruit stand in our back yard and Mom was relegated to baking with blueberries instead of huckleberries. They’re so similar, we couldn’t tell the difference and the memories of picking huckleberries quickly became an
opaque memory.

This week, Kroger’s Deals and Smith’s features 12 ounces of blueberries for only $2.99 – start stocking up now, because you’ll love to freeze these babies and have them ready for a wonderful taste of summer when the snow is a foot deep on your front yard! I just checked my freezer, and I have about three pounds of blueberries hanging out, just waiting for their moment of blueberry glory! This past weekend, I made homemade blueberry blintzes with homemade ricotta cheese in the filling – what would have cost me a small fortune to buy at a restaurant, I made for about a buck each! You gotta admit – you can’t beat it!

Here’s a quick blueberry sauce recipe that you will use for a bunch of different treats – from blintzes to topping flapjacks!

Ingredients:
2 tablespoons butter
2 pints blueberries
3/4 cup sugar
1 teaspoon cornstarch
1 lemon, juiced

Directions:
Combine the butter, blueberries, sugar, cornstarch, and lemon juice in a small pot over medium-highheat. Bring to a low boil and stir gently until the berries break down and release their natural juices. The consistency should remain a bit chunky, and it will thicken when it cools.

I like the blueberry sauce to be a little on the thicker side – so, if you make this recipe and you’d like to thicken the sauce a little, just increase the amount of cornstarch. Remember, it will thicken as it cools, so add more cornstarch a little at a time. It’s about 8:00 A.M. right now – I think I’m ready for a blueberry smoothie! And, yes – of
course I’ll be using this blueberry sauce!

Ingredients

  • 11 whole Milky Way Bars (regular Size), Divided Use
  • 3 sticks Margarine, Divided Use
  • 2-1/2 cups All-purpose Flour
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1/2 cup Buttermilk
  • 3 teaspoons Vanilla Extract, Divided
  • 2 cups Sugar
  • 4 whole Eggs
  • 2 cups Powdered Sugar
  • 1 dash Salt
  • 1/2 cup Milk (more If Needed)
  • 1 cup Finely Chopped Pecans

Preparation Instructions

Preheat oven to 300 degrees F.

In a double boiler or in a saucepan over very low heat, melt 8 Milky Way bars together with 1 stick margarine, stirring to combine. Once melted, remove from heat and set aside.

Sift flour and salt together and set aside.

Mix baking soda with buttermilk, then add 2 teaspoons vanilla and set aside.

Cream 1 stick of margarine with the 2 cups of granulated sugar. Add eggs one at a time. Add flour mixture and buttermilk alternately to the creamed mixture, mixing after each addition. Add melted candy bar mixture and mix to combine.

Pour into a greased jelly roll pan or 9 x 13 baking pan and bake for 1 hour or until cake is done in the center. Remove from oven and allow to cool.

To make the icing, melt the remaining 3 Milky Way bars with remaining 1 stick margarine (in a double boiler or in a saucepan over very low heat). Add powdered sugar, dash of salt, milk, 1 teaspoon vanilla, and chopped pecans and stir over low heat. Add more milk if needed.

Pour over the cooled cake and allow to set. Cake will be very sticky! Don’t expect neat, perfect slices.

Serve with ice cream or whipped cream, then go run five miles!

Meals Using Deals | Great Ribs for Little Money!

Great Chow for Little Money!

I always look forward to long holiday weekends because it means I’ll have some time to cook – and to take advantage of the great sales.  Holiday sale shopping usually isn’t a ‘quick trip to the store’ for me and I take my time sorting through the best buys.  This weekend I’m going for the grill!
Meijer’s has great sales this week – pork shoulder country-style ribs for $1.69/lb., jumbo cantaloupe for $2.50 each and sweet corn for 14¢ each!  For under $10, I’ll be feeding my family for at least a couple of days.

Here’s my menu:

  • Grilled Ribs with Homemade BBQ Sauce
  • Grilled Sweet Corn
  • Cantaloupe with Yogurt Honey Dressing

You’ll love these recipes – they’re so easy!

Ribs & BBQ Sauce

Ingredients:
Country Style Pork Ribs (value pack, about $6.00)
1 C. ketchup
½ C. chili sauce
1 tsp. dry mustard
1 palmful brown sugar
2 TBSP. honey
1 TBSP. dark molasses
1 TBSP. maple syrup
Salt to taste
Dash Liquid Smoke (optional, but it does make a difference)

Directions:

Combine all of the BBQ sauce ingredients and mix well.  Set aside.

Heat grill to medium and grill ribs on both sides until nearly done. (Because of the sugar content in this sauce, it will burn if you put it on the ribs too soon.) Brush with sauce until it begins to caramelize and then take them off the grill.  Let stand for 5 – 7 minutes for the juices to redistribute.

Cantaloupe with Yogurt Honey Dressing

Ingredients:

Cantaloupe
¼ C. plain yogurt
1 TBSP. honey
Fresh mint (optional)

Directions:

Scoop out melon with a melon baller or, if you don’t have one, just cut it into 1-inch chunks.  Combine honey and yogurt and drizzle over melon.  If you’re using fresh mint, snip it with kitchen scissors and add to cantaloupe.  Toss gently and refrigerate until chow time!

Grilled Corn

4 ears of corn, shucked (break them in half for better $$ mileage)
melted butter
½  lime

Grill corn for the last 10 – 12 minutes of the cooking time for the ribs.  Turn when grill marks appear.  While the corn is grilling, melt the butter and squeeze in the lime juice.  Brush butter/lime mixture on corn.  Serve.

I’m hoping you have the ingredients for the BBQ sauce in your pantry – if not, holiday sales is a great time to pick up some of the extras.  I have to confess that I don’t measure out any of the BBQ sauce ingredients – I just dump them in a bowl and mix it well.  I’d also be lying if I said I didn’t love this sauce!

I nearly forgot – this meal will cost you about $1.75 per person (one rib per person is plenty when you serve them with the cantaloupe and corn – trust me, you’ll be full!)  And, you’ll have leftovers!  Yay!

Pork Shoulder Bone-In Country Style Ribs (family pack), $1.69/lb.
Meijer White Hamburger or Hot Dog Buns or Seeded Hamburger Buns (8 ct.), B2G1 (Freeze extra buns)

Sweet Baby Rays Barbecue Sauce (18 oz.), Marinade (16 oz.) or Dipping Sauce (12 oz.), $1

Use the $1/1 Sweet Baby Ray’s Marinade, exp. 6-30-11 (SS 5/22/11)
OR use the $1/1 Sweet Baby Ray’s Dipping Sauce, exp. 6-30-11 (SS 5/22/11)
Final Price= FREE after coupon

Crockpot: Pulled Pork Sandwiches (feed 4 for about $5)
2-3 pounds Pork Shoulder
1-2 onions sliced
1-2 apples sliced
1/4 tsp allspice
1/4 tsp cinnamon

Place onions and apples on the bottom of the crockpot and place Pork shoulder on top. Sprinkle with allspice and cinnamon and cover. Medium heat for 6 hours.

1/2 hour before meat is done, drain the liquids and put 1/2 cup Sweet Rays BBQ sauce (your choice of flavor) Cook for another 1/2 hour.
Pull the meat off the bone with 2 forks. If there is any resistance, pork is not ready and place back in the crockpot for another hour.

Serve on hamburger buns.
